Creamy Broccoli Soup - Vegan



Creamy Broccoli Soup


This soup gives the texture and taste of a rich creamy soup without the added dairy and high saturated fat content. Enjoy it with whole wheat or rice crackers.
Makes about 8 1-cup servings


Ingredients
2 medium potatoes, scrubbed and diced
2 medium celery stalks, sliced
6 cups broccoli florets
2 cups water
3 cups plain rice milk, divided
1 1/2 teaspoons dried basil
1/2 teaspoon dried tarragon
3/4 teaspoon salt
1/4 teaspoon black pepper
3 - 4 tablespoons Sesame Seasoning


 
Place potatoes, celery, broccoli, and water in a large pot. Bring to a simmer. Cover and cook over medium heat for about 10 minutes, or until potato chunks are tender when pierced with a sharp knife (do not overcook).

Transfer about 3 cups of the vegetables to a blender. Add 2 cups rice milk, basil, tarragon, salt, and black pepper. Blend for about 60 seconds, or until completely smooth. Pour blended mixture into a clean pot.

Place remaining vegetables in blender along with the cooking liquid and remaining 1 cup rice milk. Blend vegetables until they are completely smooth or leave them slightly chunky, depending on your taste. Combine blended mixtures, then stir in Sesame Seasoning. Heat gently, stirring frequently, until steamy.

Only Stevia for Me

As I diabetic, and a person working at weight loss and better health, I rarely use sugar and I have totally quit using any form of artificial sweeteners.  What I choose to use now for sweetening my tea or any other thing I want to sweeten, is Stevia. Not the white Stevia Powder, but the natural, unaltered, Green Stevia Powder!

I find it very odd as well as sad that Health Food Stores and Health Food sections of Grocery Stores sell the white powder and in most cases I've seen, no green Stevia.  We do have one store that sells both kinds, several choices of the white and only 1 choice of the green... imported from India!!! I don't mind things being imported from other countries if we don't have the product here in Canada, but when it's not only in our own country but our own province too!  The organic farm I get my Green Stevia from is 160.9 kilometers away.... this is 99.978625 miles, so fits perfectly in the '100 Mile Diet'!!

Yesterday I ordered another 215gr bag of Organic Green Stevia from this wonderful Organic Farm where it is grown. I also ordered a 215gr bag for my friend Joyce as she wants to start using it now too.  This is great!! They send it out right away, by mail, and if you order $150 minimum or if you recommend their products to a friend, they give you free shipping... and they always include some little extra something in the package.  Oh, I'm not saying they are the best selection of promotional products in fact, it's not really promotional products they send, they include samples of other products they have available.

In this order, I also included for myself a one month supply of Happy Caps, a mineral mixture from organic products, including Stevia.

There is some controversy regarding the safety of Stevia Powder for use in humans.  I believe the naturally grown herb, the Green Stevia is not only safe, but also has many good health properties.  The white powder they are calling Stevia may not be so safe for us and I am not sure they should allow the sale or use of that product.  It is called Stevia because it is made using Stevioside which has been extracted from the herb then mixed with fillers to create the sweet white powder.  With health food stores selling this product, many people think they are doing something healthy by using it, and they are being lied to. It is a processed product, not a natural, whole food product.  I used the white powder for awhile, not knowing better, though now that I know better I use better.  


The Stevia I get comes in a zip-lock bag.  I took an old, empty spice jar I had here and filled it with some of that Green Stevia Powder so I could use it without opening the bag every time.  I also filled one for carrying with me wherever I go.


A teaspoon is too large to fit into the spice jar, and you only need such a tiny bit of the powder to sweeten a cup of tea, so I use a souvenir spoon for this purpose. The one I take with me I made into a necklace so I can wear it around my neck and always know where it is, the one I use at home sits in the cupboard beside the jar of Stevia.  This system works very well for me.

ONIONS! I had never heard this!!! PLEASE READ TO THE END: IMPORTANT

This is a VERY interesting article I read on Facebook and want to share with lots of people. I can't promise it is true or that it really works, but a dear friend of mine read it and he used raw onions in his house when he felt a flu coming on... he didn't get sick. Read the article and decide for yourself if it is worth trying. It can't hurt and maybe it really can help!! Also, the information at the end could save you and those you love from food poisoning!!





In 1919 when the flu killed 40 million people there was this Doctor that visited the many farmers to see if he could help them combat the flu... Many of the farmers and their families had contracted it and many died.

The doctor came upon this one farmer and to his surprise, everyone was very healthy. When the doctor asked what the farmer was doing that was different the wife replied that she had placed an unpeeled onion in a dish in the rooms of the home, (probably only two rooms back then). The doctor couldn't believe it and asked if he could have one of the onions and place it under the microscope. She gave him one and when he did this, he did find the flu virus in the onion. It obviously absorbed the bacteria, therefore, keeping the family healthy. 

Now, I heard this story from my hairdresser. She said that several years ago, many of her employees were coming down with the flu, and so were many of her customers. The next year she placed several bowls with onions around in her shop. To her surprise, none of her staff got sick. It must work. Try it and see what happens. We did it last year and we never got the flu. 

Now there is a P. S. to this for I sent it to a friend in Oregon who regularly contributes material to me on health issues. She replied with this most interesting experience about onions:

Thanks for the reminder. I don't know about the farmer's story...but, I do know that I contacted pneumonia, and, needless to say, I was very ill... I came across an article that said to cut both ends off an onion put it into an empty jar, and place the jar next to the sick patient at night. It said the onion would be black in the morning from the germs...sure enough it happened just like that...the onion was a mess and I began to feel better. 

Another thing I read in the article was that onions and garlic placed around the room saved many from the black plague years ago. They have powerful antibacterial, antiseptic properties. 

This is the other note. Lots of times when we have stomach problems we don't know what to blame. Maybe it's the onions that are to blame. Onions absorb bacteria is the reason they are so good at preventing us from getting colds and flu and is the very reason we shouldn't eat an onion that has been sitting for a time after it has been cut open. 

LEFT OVER ONIONS ARE POISONOUS 

I had the wonderful privilege of touring Mullins Food Products, Makers of mayonnaise. Questions about food poisoning came up, and I wanted to share what I learned from a chemist. 

Ed, who was our tour guide, is a food chemistry whiz. During the tour, someone asked if we really needed to worry about mayonnaise. People are always worried that mayonnaise will spoil. Ed's answer will surprise you. Ed said that all commercially-made mayo is completely safe. 

"It doesn't even have to be refrigerated. No harm in refrigerating it, but it's not really necessary." He explained that the pH in mayonnaise is set at a point that bacteria could not survive in that environment. He then talked about the summer picnic, with the bowl of potato salad sitting on the table, and how everyone blames the mayonnaise when someone gets sick. 

Ed says that, when food poisoning is reported, the first thing the officials look for is when the 'victim' last ate ONIONS and where those onions came from (in the potato salad?). Ed says it's not the mayonnaise (as long as it's not homemade mayo) that spoils in the outdoors. It's probably the ONIONS, and if not the onions, it's the POTATOES. 

He explained onions are a huge magnet for bacteria, especially uncooked onions. You should never plan to keep a portion of a sliced onion.. He says it's not even safe if you put it in a zip-lock bag and put it in your refrigerator. 

It's already contaminated enough just by being cut open and out for a bit, that it can be a danger to you (and doubly watch out for those onions you put in your hotdogs at the baseball park!). Ed says if you take the leftover onion and cook it like crazy you'll probably be okay, but if you slice that leftover onion and put on your sandwich, you're asking for trouble. Both the onions and the moist potato in a potato salad, will attract and grow bacteria faster than any commercial mayonnaise will even begin to break down. 

Also, dogs should never eat onions. Their stomachs cannot metabolize onions. 

Please remember it is dangerous to cut an onion and try to use it to cook the next day, it becomes highly poisonous for even a single night and creates toxic bacteria which may cause adverse stomach infections because of excess bile secretions and even food poisoning.

"Itis" Issues

In January 2012, I got bronchitis for the first time in a very long time. It's been more than 15 years since I last had a cold or flu so I was very surprised to suddenly be sick and diagnosed with bronchitis. I took antibiotics and in a short time I was well again.

Summer rolled around and all was great, then one night riding my trike home I noticed I had a bit or a sore throat.  I didn't worry about it, figuring it would be gone by morning.  The next morning it was way worse and my voice was barely working so I had to cancel plans to ride with the Lone Wolves as it was to be a very long ride that day.  As the day progressed I decided to go to the 'walk-in' medical clinic and have it checked out.  I was told I had viral laryngitis and that it would go away on its own in 2 to 3 days.  Over the next couple days I got feeling worse and went back to the 'walk-in' clinic. This time I was told I had also developed sinusitis and though I insisted I also had bronchitis, the doctor said there was nothing in my chest, the phlegm I was coughing up was from the sinuses draining down my throat. He said I would get better without drugs, that I didn't need antibiotics.  While it was wonderful to see a doctor who was not trying to push drugs on me for any little thing, in this case I felt I did need antibiotics since I knew he was wrong with the diagnosis.  The next day I got into see my own doctor. It usually takes nearly a week to get in so is the reason I often go to the 'walk-in' instead. This time I was pleasantly surprised and was fit in the same day. I was diagnosed with sinusitis AND bronchitis, by this time the laryngitis was mostly gone and no longer an issue.  I was sent for chest x-rays and given very strong antibiotics. About a week later I was phoned and asked to come in for a follow up visit, I did and he found I still had the rattle in my chest so I was given another go around of drugs and sent for a second chest x-ray.  In time I did recover.

Here it is November and once again I have sinusitis and laryngitis!!!  I've been home sick for several days now and on antibiotics for 2 or 3 days now as well as rinsing out my sinuses regularly with a Neti pot.  For some reason this time is taking a lot more out of me as far as strength goes.  I feel much more weakened by it than before.  Maybe that has something to do with the fact I've been staying home rather than continuing to be out and about while sick. 


It has been challenging to breath, feeling like I have a heavy weight on my chest and I go into nasty fits of coughing and usually hack up big gobs of phlegm.  The other 2 times, there were flecks of blood in the phlegm, though this time there has been very little of that. There has  been lots of blood in the phlegm/mucus from my nose, though. Thankfully this is showing signs of improvement.

Well, it's way past time for me to go rinse out my sinuses again, feed/water animals, and be off to bed.

My Life as of Late

Most of the time I am out and about, being social, doing things, going places, seeing people.  It is rare that I stay home much at all and when I do feel like I need to stay home to 'recharge my batteries', it's only for 1 - 2 days, then I get 'cabin fever' and feel like I must get out of here or go crazy!!  Well, for some strange reason, for the last week or two I have been just staying home, sitting in my big chair all day every day and halfway into the night just playing Spider Solitaire, game after game after game. I am happy to say that I am getting very tired of the game as I got very tired of MahJong after playing so much of it for so long, and Solitaire before that. I really must stop sitting here playing stupid games on the computer (something I never used to do) and get back to being more active. I know that this is not good for my mental or physical health to just sit here like this. I`m sure that, like all other things, this too shall pass.... I just hope it passes quickly and I get back into enjoying a much more active life style.

Basic Raw Vegan Mayonnaise

If you read this blog you know I eat in the Vegan way.... no animal products, not even milk, cheese, eggs, fish.  I eat vegetables and fruits, nuts, seeds, grains (except wheat).  Here is a recipe I recently read and decided to post it here not only to share it with you, but also to make sure I can find it again if and when I decide to make some of this to use in some kind of salad or whatever that calls for mayonnaise.  Unfortunately, I only have a regular and rather old blender, so am not sure it would work for making this... see note at bottom.  I got this recipe from Healthy Blender Recipes.


Basic Raw Vegan Mayonnaise

  • 1 cup organic raw cashews soaked for 2 hours (soaking is optional)
  • 1/4 cup cold pressed extra virgin olive oil
  • 1/4 cup raw cauliflower
  • 1/2 cup filtered water
  • 3 Tbsp lemon juice or more to taste
  • 1 tsp mustard
  • 1 tsp raw agave nectar or 1 chopped pitted date
  • 1 tsp apple cider vinegar
  • Tiny 1/2 pinch of Celtic sea salt or more to taste
  1. Put the cashews and cauliflower in your high speed blender (I use a Vitamix) and add the water until combined well.
  2. Slowly add the oil in one steady stream, and process until thick and creamy.
  3. Place the rest of the ingredients into the blender to taste, and process until smooth.
  4. Add in some more salt, mustard or lemon juice to taste until you create your perfect blend.
**Please note – you will need a high speed blender such as a Vitamix, in order to achieve a really creamy consistency.

Flourless Chocolate Quinoa Cookies

I have found recently that bread causes my blood glucose levels to go higher than I want them to.  When you have been diagnosed as diabetic you have to be aware of these things. It is possible that I may not do well with wheat, so I am doing my best to cut bread and wheat out of my diet.  Because of this, I am very interested in flourless recipes. I also am interested in using quinoa as it is not only very healthy and high in protein, but it is also rather tasty.

Cooking Quinoa is a great site with lots of wonderful recipes that use quinoa, are healthy, and many are vegan.  Wendy even has some cook books you can buy for very reasonable prices. Inn the near future I have a vegan potluck to go to and I am thinking of  baking a batch of cookies from Wendy's site.

Wendy Polisi's Flourless Chocolate Quinoa Cookies


  • 2 flax/chia eggs (1 T flax meal + 1 T chia seeds + 6 T warm water)
  • 1 cup blanched almonds (see note)
  • 1 cup cooked quinoa
  • ¾ tsp baking soda
  • ¾ tsp salt
  • 1/3 cup almond butter
  • 1 Tbsp coconut oil
  • ¼ cup apple sauce
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • ¾ cup vegan chocolate chips
  1. Preheat oven to 350 degrees. 
  2. Line a baking sheet with parchment paper.
  3. In a small bowl combine flax meal (or ground flax seeds), chia seed and warm water.  Whisk well and set aside.
  4. In the Sous Chef® food processor combine almonds and quinoa.   Process for 1 minute, or until you have a fine meal.  Add baking soda and salt and process until blended.
  5. Heat a small saucepan to medium low and add almond butter and coconut oil.  Cook until coconut oil and almond butter are melted, whisking occasionally.  Add in apple sauce and maple syrup and whisk until heated through.  Remove from heat and stir in vanilla and flax/chia egg.
  6. Add the warm almond butter mixture to your food processor and process until a dough has formed.  
  7. Immediately add in the chocolate chips and process until chocolate is melted and blended, stopping to scrape down the sides as necessary.
  8. Roll the dough into small balls and flatten with your fingers.  (You could also use a fork.) 
  9. Bake for 12 to 15 minutes.  Allow to cool for 5 minutes in the pan and then transfer to a wire rack to cool completely.
  10. Note:  To blanch whole almonds, boil water in a medium saucepan.  Add almonds and cook for one minute.  Drain and allow to cool slightly.  Peel almonds.  You may skip this step if desired.
  11. Variations:
  12. For double chocolate cookies, allow the batter to cool and stir in ½ cup vegan chocolate chips.
  13. For Chocolate Macadamia Nut Cookies, stir in ½ cup chopped macadamia nuts just prior to cooking.
  14. For Cherry Chocolate Cookies, stir in ½ cup dried unsweetened cherries just prior to cooking.

5 Minute Blueberry Quinoa Flake Bake with Lemon Cream

 
 5 minute breakfast cake made with just 5 (simple) ingredients.

Ingredients
Blueberry Quinoa Flake Bake
  • ¼ cup unsweetened apple sauce
  • 1 egg *see note
  • ½ cup quinoa flakes
  • ½ teaspoon ground cinnamon
  • ½ cup fresh or frozen blueberries
Lemon Cream
Directions
Blueberry Quinoa Flake Bake
  1. Prepare a 16oz. microwave/oven safe dish by oiling with a dab of coconut oil. Set aside. Drop all ingredients in a small bowl and mix until fully incorporated. Press mixture into prepare dish and even out with fork.
  2. Microwave option: Place in the microwave and cook for 3 minutes. You’ll know when it’s done when it rises slightly, is harder to the touch, and pulls away from the sides of the dish. Don’t bake it too long, or you’ll have a chocolate Frisbee!
  3. Oven option: Place in a preheated oven at 350F and bake for 25-30 minutes, or until toothpick inserted comes out clean.
  4. Allow to rest for 1 minute before tipping over onto a plate and smothering with lemon cream. Or, serve in the dish as I did with this version.
Lemon Cream
  1. Place all ingredients in a small blender and blend until smooth.
*Notes
Feel free to use ¼ cup egg whites instead of 1 egg. To keep vegan, use and additional ¼ cup apple sauce and cook for a slightly longer period. If you’re not sensitive to oats, and can’t get your paws on any quinoa flakes, quick oats will work well for this recipe, too.

I will Miss Dan

I will miss my long time friend, Dan. We met about 12 or more years ago and became good friends.  We agreed that we would never try to be any more than good friends because that would not work for us, but we have grown to love each other a lot.... just a close friends love. Over the years, Dan has helped me in many ways.  He is a professional dry wall installer with knowledge in many other areas. Some of the things Dan has helped me with:
- I bought a pellet burning stove which he helped me to install.
- he cut a doorway into the wall between the room the pellet stove is in and my bedroom so the warm air can come through.
- I bought laminate flooring and he installed it for me... living room, kitchen, hallway, bedroom and loom room.
- I brought home some old bathtubs to use as raised bed gardens and Dan helped me to set them up.
- Dan has helped me with other yard work too, has helped me to take trailer loads to the garbage dump.
- Since he has lots of knowledge of computers and loves working on them, he has been my pc mechanic.
- When I have wanted to rearrange my home he has helped me to move heavy furniture.
- Dan has set up my Audio/Video system.
- There are many other things to tha Dan has helped me with over the years.

Dan and I have not always seen eye-to-eye on everything and we have had some bad arguments,  but we have always gotten past all that in the end and stayed friends.  We will still remain friends and will talk regularly over the internet and I am happy and grateful for that..... though it won't be the same as actually seeing him, going for drives with him, and he won't be around to help me with all these things I can't do by myself.  This last scares me.  13 years ago I was used to doing things myself, now I have become used to having help.  13 years ago I had physical problems, especially Fibromyalgia, now I still have that and more (deteriorated discs, arthritis, diabetes to name a few). I will very much miss my friend Dan... and I will miss having someone to help with all those things I need help with.

A friend is one who knows you and loves you just the same.

Getting Some Better

I told you the other day that I have been quite ill lately. Today makes it 9 days now and finally I am starting to feel just a wee bit better. I was given 6 antibiotic pills to take, one each night before bed and I will be taking #5 of the 6 tonight. I am still coughing a fair bit, but not as much as I was and the phlegm I cough up is a healthier color now than the brownish mess with spots of blood in it that it was even yesterday. At first, I continued to live my life, out here and there on my trike, doing whatever I wanted/needed to do.  I was determined that I was not to be kept down. However, I was not getting any better and finally had to settle down, stay home and give my body the change to heal itself. 3 days in a row now I have been staying home and I don't mind telling you I really think it is time to get out of here for awhile. The weather forecast for this week looks pretty good for the most part, though the temperatures will be 10°C cooler than what we have had for some time now. I actually won't mind a bit cooler weather, though the evenings/nights are now rather cold for riding the trike, not as much fun as it has been.  However, that just means I will have to carry warm clothes with me so put on for the ride home. The other night, when I was in town and rode home at night, I sure was glad I had my hooded sweatshirt along. I put it on under my leather jacket and did up the hood before putting on my helmet. It really helped a lot as it was very cool, especially coming past the lake.  Tomorrow, if I am feeling up to it, I will ride to the small town where my mom lives, about 1/2 hour ride.  It is her 89th birthday and I do so much want to be there with her on this special day. There was a small family party for her this evening and I had to miss it. I want to visit her and take her out for dinner tomorrow.  I will be coming home early, right after dinner, so that I can be home before the temperatures drop too much.  For people who are walking or driving, it is still very warm, it's just if you are riding a motorcycle you are not protected from all the wind so it is a lot colder.

Beware of the ITIS family!!



When I was a kid I had an ongoing relationship with Tonsil Itis, missing school each time he came around, and that was fairly often as I remember it. My parents did everything they could to make Tonsil Itis go away, but he always sneaked back to me. I was 17 years old when they finally were able to take steps to have him cut out of my life permanently.

In my later 20s or early 30s, without my permission, Arthur Itis moved in with me. He's lived here for quite some years now and I don't seem to be able to move him out, apparently once he's moved in you can not make him leave, though I keep trying. I admit I have learned to live with Arthur for the most part, and though he can some days be a 'real pain', we have managed to co-exist.

Several months back now, Arthur moved one of his cousins in too... without even asking me!!! I got right on it and managed to evict Bronch Itis fairly quickly. I thought all would be well and all but forgot the incident.

One week ago today I felt something untoward was afoot around here. It turned out that another Itis had moved in! This time it was Laryng Itis, another of Arthur's cousins. When I went to the authorities about this, I was assured that Larnyg was only here on vacation and would be gone again in 2-3 days. Thank God for that... or so thought I. He is still popping in and out of my life, trying his best to keep hanging around and interrupting my conversations.

I hadn't thought at all about Bronch Itis until earlier this week when he moved right back in again, the sneaky bugger!! As if that isn't enough, Bronch brought his twin brother Sinus Itis and their 2 buddies Nasty Phlegm and Lotsa Snot! I am currently taking stops to evict them all. Though it feels today like they will never leave me alone, I must have faith and know that they indeed will soon be out of my life. They are a nasty gang of ruffians and I want them gone!!

So, as you can see, I have had nothing but problems with members of the infamous Itis family!! I have heard that Arthur has 2 girl cousins that are also very nasty and in fact, can be quite dangerous and even life threatening, so please watch out for Appendas Itis and Pancreat Itis. Lock your doors and do NOT allow them entry!!

Just Sayin'

Now that I am soon to be feeling better after all the nastiness with my health, I will soon be catching up on some posts. I've been having a really great summer I want to tell you about.  So.... come on  back in a few days and see what I'm talking about!!



I've been sick!!

I have been rather ill the last while, which is not actually normal for me. First one evening I was on my way home from visiting a friend and I noticed my throat was quite sore.  I thought I better drink more water, am maybe getting a little dehydrated as I know I haven't been drinking enough, it has been very hot, and I ride a motorcycle which tends to make one drier. 

The next morning I was to go on a long day's ride with friends from one of the motorcycle riding groups I am part of. I had really been looking forward to this ride as well as riding with the BC Lone Wolves again. They are such a great group of people!  Unfortunately, I had to change my plans and stay home as my throat was even more painful and I didn't want to be sick on a long ride like that. After texting to let Buzz know I would not be able to go along, I went back to sleep and when I woke up I found that my voice was barely working.  Hmmmm.  It has been many many years now since I have gotten a flu or cold, yet obviously something was going on in my body that I did not like.  That afternoon I went to a walk-in clinic to see a doctor and was told that I had 'viral laryngitis' and that it would go away on it's own in a 2-3 days.

A few days later sees me stuffed up in my head, sneezing and blowing lot of 'phlegm' out of my nose.  I also was coughing and hacking up phlegm from my lungs!  But hey, the sore throat was gone! I decided to go back to the walk-in clinic because I have had lung problems before, including bronchitis and pneumonia and know better than to mess around with that!! So, back I go and see another doctor who listens to my chest a bit and informs me that I do not need any antibiotics as there is nothing at all in my lungs.  I have sinusitis and the phlegm is running down my throat into my lungs and that is what I am coughing up. He says to get a Nedi Pot and rinse out my sinuses and all will be good.  A friend lent me his big syringe that his doctor had given him awhile back for flushing out the sinuses, and all I had to do was wash it before using it.  Hey, I can do that and save $20.00!! Flushing the sinuses was a bit tricky, something I'd never done before, yet do it I did and yes, it did seem to help some.  Still, I had the nasty cough and lots of phlegm coming to light.

Yesterday, I talked to 2 friends on the phone, both heard my cough and both told me what I had already been thinking. It was good to hear the support!!  They both said "Go to another doctor. Get a second opinion!! This guy is wrong!! That is a very nasty cough!!" or things of that nature.  I called my own family doctor to see if I could get in, ya like that would happen the same day!!  Well, it did!! Usually it takes several days to a week to get in, but they fit me in about an hour after I called.  Guess I sounded sick!! haha.  Well, he agreed that I have sinusitis, though he also feels I have either bronchitis or pneumonia.  He gave me a requisition for chest x-rays and a prescription for antibiotics and off I went.

Today I had the x-rays done so will find out next week which it is, bronchitis or pneumonia, and in the meantime I will be working at getting back to my usual healthy self!

I am so grateful that I have friends who care about me, both here in town and even on Facebook!! I so cherish these people in my life!!

TOPS Today

Today instead of having our usual TOPS meeting (Take Off Pounds Sensibly), we just had our weigh in and then went over to the Seventh Day Adventist Church tot watch a video. They chose to show us one my Dr. McDougall  about weight loss, a very good choice I'd say.  It was a fabulous video with great information, including how 500 calories of rice, vegetables, grains, fruits can fill the stomach where are 500 calories of butter, meat, cheese still leaves your stomach mostly empty. It talked about how if we over eat vegetables our bodies will burn them off as it takes less energy to do that then to store them, while if we over eat fats our bodies store the extra calories as fat. It was a very informative video.

After the video, we all went downstairs to the kitchen where we were fed a wonderful and very healthy meal. I have always loved going to the fall fair and always made a point of going to the Seventh Day Adventist booth in the Food Fair, just especially to have a Haystack.... and that is what they fed us today. Mostly vegetables with some beans, salsa and a sauce that I'm not sure what is in it, it is not just very yummy, but is also very healthy and filling.  Today there were carob cookies for desert and I ate 3 of them.

I know all my TOPS friends there very much enjoyed it and we are planning to go for another video later in the fall when hopefully more of our members can attend.  There were only 8 of us there and we have over 20 members.  I am sure most of the missing will be sorry when they hear what they missed lol. The ladies from the church, also among my list of friends, obviously love putting on these videos and feeding people. They are such great ladies.

Vegetarian Black Quinoa Taco Salad


I found the following recipe online and I think this looks and sounds fabulous!! Unfortunately, the way they have written the recipe it is not vegetarian. Change the chicken broth to vegetable broth and it is vegetarian. Use soy cheese and no sour cream (no animal products) and it’s even vegan. Cook the quinoa ahead of time and you can have dinner without turning on the stove. I plan to make this recipe as a vegan meal and since I have the regular and the red quinoa I will likely use the red rather than going in search of black quinoa.






yield: 4 servings


Ingredients:
for the quinoa-
1 cup black quinoa
2 cups low sodium chicken broth
1 tablespoon taco seasoning
for the salad-
any fixing you like:
lettuce
tomato
avocado
lime
cheese
cilantro
salsa
sour cream
tortilla chips

Directions:
Rinse quinoa under cold water and drain. Pour the quinoa into a large pot, and stir in chicken stock and taco seasoning. Cover with lid and bring to boil, and then reduce to simmer. Cook on low about 20 minutes or until all liquid has been absorbed.

When ready to serve, scoop black quinoa into bowls and top with any desired toppings.

Lower Cholesterol Naturally

I have diabetes, so my doctor and health nurse have expressed concern with my cholesterol levels. I refuse to take the statin drugs the nurse has tried so hard to get me onto.  I know there are better, healthier, more effective ways of dealing with this and I know I will find one that works for me.  I just found this article and I will, starting today, be eating 2 apples every day for the next 6 months or more and see how this works for my body.




More evidence continues to surface supporting the superior effectiveness of nature's foods over medication in preventing disease. New research shows that just two apples a day could help protect women against heart disease lowering blood fat levels by almost 25 percent, a claim unattainable by cardiovascular prescription medications.

Scientists found apples significantly lowered blood fat levels in postmenopausal women, the group most at risk of heart attacks and strokes.

Studies in the past have found that flavonoids act as antioxidants -- enzymes that target free radicals that can damage DNA. Flavonoids are commonly found in chocolate, green tea and other fruits and vegetables.
Snacking on the fruit every day for six months slashed levels of so-called "bad cholesterol" by almost a quarter, a figure that all statin drugs combined cannot attain.

Why Cholesterol Drugs Are Ineffective

Two-thirds of people taking widely prescribed cholesterol-lowering medicines do not get as much benefit as drug company statements suggest they should, primarily due to cholesterol drugs working better in labs than they do in people.

Moreover, study after study has shown that cholesterol-lowering drugs called statins (Lipitor, Mevecor, Crestor, etc.) do not reduce the risk of death and heart disease in people with moderately high cholesterol and high blood pressure.
Despite their ineffectiveness, a recent report from the American Heart Association predicted a tripling of direct medical costs of cardiovascular disease from $272.5 billion to $818.1 billion between 2010 and 2030 (Circulation, March 2011, Vol. 123, pp. 933-944).

Statin medications are the number-one-selling drugs in the world. They work by interfering with the liver function and reducing the production of LDL. But statins are a questionable innovation on at least a couple of accounts. Firstly they are not without side-effects: they can, for example, lead to the breakdown of major muscular material, which can ultimately overwhelm the kidneys and even cause acute renal failure.

Statins also appear to reduce the body's natural levels of the vitamin-like, cellular protection agent known as Co-enzyme Q10. This benzoquinone plays an important role in cellular energy release, particularly in hard worked areas like the lungs, liver and heart. CoQ10 (as it is sometimes called) has also been shown to protect the brain against neurological degeneration. But perhaps most interestingly, with respect to cholesterol, CoQ10 also acts as an antioxidant, particularly active in protecting the system against LDL oxidation and the potential problems associated with this as described above. So whilst Statins might provide a reduction in LDL per se, they might also be causing more problems in the long-term. Naturally, as with many modern drugs, they generally have to be taken for the long-term by anyone who has been prescribed them.

What is particularly disturbing about Statins is, perhaps, the fact that they may be seen as a 'quick fix' for unhealthily high LDL, and consequently cholesterol levels throughout the body. However, the average reduction for LDL cholesterol for all statin drugs combined is less than 18% making the plant extract blend a feasible, affordable and an superior option to Statins for patients with elevated LDL cholesterol levels. Considering the lack of side effects from red yeast rice and artichoke leaf extract blends, the option is gaining deserved attention in the natural health community.

Study Support Previous Evidence


The findings, by a team of researchers at Florida State University in the U.S, support previous evidence that apples could be good for the heart. But the latest study suggests they could benefit one of the highest-risk groups.
Almost 50 percent of women will suffer from heart disease or a stroke and it is the biggest single cause of death among post-menopausal women.

Up to the menopause, women appear to have a natural immunity to heart disease and the rate of illness is only a third of that seen in men. But from the age of around 50 onwards, the incidence increases sharply.

Researchers wanted to see if eating the equivalent of two apples every day could have a significant effect on heart disease risk.

They recruited 160 women who had been through the menopause and got half to eat 75 grammes a day of dried apple - the equivalent of two medium-sized fresh apples.

As a comparison, the other half were told to eat the same quantity of prunes to see if they had a similar effect.
Each volunteer underwent blood tests every three months for one year.
The results, published in the Journal of the Academy of Nutrition and Dietetics, showed that after three months total cholesterol levels in the apple-eating group had dropped by nine percent and LDL cholesterol by 16 percent.

After six months, levels were even lower, with total cholesterol down 13 percent and LDL levels dropping by 24 percent. There was no further decline in the remaining six months of the experiment.

Prunes lowered cholesterol levels slightly but not to the same extent as the dried apple.

In a report on their findings the researchers said: ‘Consumption of about two medium-sized apples can significantly lower cholesterol levels as early as three months.’

Previous researchers at UC Davis School of Medicine have determined that drinking apple juice and eating apples has a beneficial effect on risk factors for heart disease.

In 2009, a Polish study revealed two apples a day also halved the risk of bowel cancer in adults.

And research by scientists at St. George’s Hospital Medical School in London shows lung function is boosted in middle-aged men if they eat at least one apple every day.

Choose Your Apples Wisely

Many apples sold in supermarkets and greengrocers contain pesticide residues that are above the maximum legal level.

Organically produced apples have a 15 percent higher antioxidant capacity than conventionally produced apples.

A report published in March 2008 by the Organic Center at America’s Organic Trade Association argued that organic produce is 25 per cent more nutritious than conventional foodstuffs.

Bernhard Watzl from the Federal Research Institute of Nutrition and Food in Karlsruhe stated “...organically produced apples displayed a higher phytochemical concentration and a higher antioxidant capacity than conventionally produced apples.”
